THE EASIEST BLUEBERRY GLAZED DONUTS
I don’t know what day of quarantine we’re on – does it even really matter now that we could be in this for up to 18 months? – but I do know that I’m starting to have SERIOUS cravings for the things I used to indulge in whenever I pleased. I mean if I wanted a donut, I got a donut – but now I can’t. Well, technically I can – but our family has chosen to avoid takeout and delivery, and cook (and bake( at home as much as possible – and we’ve actually been doing ok with it. Until yesterday…
A couple days ago one of my favourite donut shops – Sunshine Donuts in Burlington – announced on their Instagram page that they would be opening for the three-day weekend and selling their delectable treats via drive-up order service. I’m pretty sure I was drooling the second I saw images of their fluffy, melt-in-your-mouth creations, but getting out there early and waiting in the expected long line-up of cars (and yes, that’s exactly what happened), was not how I wanted to spend my Friday morning.
So instead, I checked my pantry and turned to Pinterest to find something quick and easy that I could whip up and satisfy the insane sweet tooth that those Sunshine Donut pics created! What I found and decided to attempt was Kim’s Cravings Baked Blueberry Donuts – and am I ever glad that I did. These super duper easy baked donuts were so quick to whip up and absolutely delicious!
What I love about this recipe is that you can substitute the flour, milk, and oil with your own personal preferences, and sub-out the blueberries for any other berry (or frozen ones) that you have on hand – perfect for quarantine life.

Create perfectly shaped donuts with donut baking trays like these ones HERE and HERE.
- DONUTS:
- 1 1/4 C All Purpose White Flour (or any flour of your choice)
- 1 Tsp Baking Powder
- 1/2 Tsp Salt
- 1/4 Cup Sugar
- 1 Egg
- 1/2 Cup Almond Milk (or any milk of your choice)
- 1 Tsp Pure Vanilla Extract
- 2 Tbsp Melted Coconut Oil (or any butter or oil of your choice)
- 1/2 Cup Blueberries (or any berry of your choice)
- VANILLA GLAZE:
- 2 Cups Powdered Sugar
- 1/2 Tsp Pure Vanilla Extract
- 1/4 Cup Water
- Preheat over to 350 degrees.
- Spray donut pans with non-stick cooking spray.
- Mix all the dry ingredients in a large bowl.
- Add in wet ingredients.
- Stir in blueberries.
- Spoon batter in pans and smooth out with the back of a spoon.
- Bake for 10 minutes and let them cool completely.
- Mix the glaze ingredients together in a shallow dish.
- When the donuts are completely cooled, dip both sides into the glaze and let them dry.
